Creamy Chicken Gnocchi

2020 has been a rocky start, and trying to buy essentials from the super market has become an experience for most. This recipe is based from our creamy chicken carbonara, we had to adjust a few ingredients due to not being able to buy them from our supermarket due to the "Panic Buyers".

So this is our pandemic version, with the ingredients we could buy and what was left in our cupboard and it turned out to be a beautiful tasting dish, the whole family enjoyed it.

Creamy Chicken Gnocchi 
Serves 4

Coconut Oil
500gr Chicken Breast
300-500gr Gnocchi
200gr Chorizo
500gr Mushrooms
100gr Shallots
6 Garlic Cloves
Grated Tasty Cheese
4 Eggs
1 and 1/2 cans Coconut Cream
Black Cracked Pepper and Pink Himalayan Salt to taste.

In a fry pan, heat up some coconut oil and cook the Chorizo, when cooked remove from pan.

In the fry pan add crushed garlic, diced mushroom and cook, then add the chicken.

Keep ingredients in the pan add 1 can of coconut cream, let reduce and thicken.

In a pot boil water, add Gnocchi, when the Gnocchi floats to the top its ready, drain water. Place
Gnocchi back into pot on low heat, add 4 eggs and a handful of cheese, keep stirring until eggs are cooked and cheese has melted.

Then add the Gnocchi, egg and cheese mixture and the other 1/2 of the coconut cream to the rest of the ingredients in the frypan and stir until all combined.

Easily serves 4, add the Chorizo and fresh Shallots for garnish.
